Chicken & Mushroom Zucchini Pasta



Eating Paleo, I have never felt better. But I LOVE an amazing pasta dish. Not being able to eat any type of grain is frustrating, I think I found my way around the noodle (grain) problem. 

I have made this dish a couple different ways by adding things to this dish but here is the staple recipe. Ideas on things to add will be at the bottom of post.

 Serving size 4 


Ingredients 
- 1 lb of boneless skinless chicken breast
- 2 tbsp of coconut oil 
- 4 small/medium green zucchini
-1/2 chopped red onion
- 3 cloves of garlic 
- 1/4 tsp dried basil 
- 1/2 tsp dried parsley 
- 1/2 to 1 carton of sliced mushrooms 
- 1/2 juice from a lemon 
- Fresh shredded parmigiana reggiano cheese
- Sea salt and pepper to taste. 

Directions 
1. Put 2 tbsp of coconut oil in pan on medium heat and melt. 
2. Slice chicken breast into nugget sizes. Sprinkle with salt and pepper. (*note salt cooks OUT of your food and brings out flavor if you use it in the beginning) 
3. Add chicken to pan and cook chicken. 
4. Chop red onion into small peices (my kids HATE onion but it gives such good flavor I chop mine super small so they can't tell) 
5. Mince 3 cloves of garlic 
6. Remove chicken from pan and set aside.
7. Add onion, garlic, mushrooms, dry seasoning and a pinch of salt & pepper into pan and sauté. 
8. Make zucchini into "spaghetti" noodles. 

I use a Veggetti tool. It has two different size "noodles" you can make. It is SO easy to make. You cut off ends and twist your veggie of choice in the Veggetti. 
9. Once veggies are sautéed add juice from half a lemon. 
10. Mix zucchini noodles and veggies thoroughly. Add chicken. 
11. Serve with a pinch of fresh cheese ontop.

Things you can add in: sun dried tomatoes, artichoke hearts, broccoli florets, fresh or frozen peas

Energy bar snack recipe

Ok, I have been having so much fun experimenting around with different recipes!!!! Here is one I LOVE! 

Great for a snack or dessert after dinner. 


Dark Chocolate & Cranberry Bars: 
1 cup of raw almonds. (No salt) 
1 cup of pitted dates 
1 cup of dried cranberries 
1/2 cup dark chocolate chips 
2 Tablespoons of shredded, unsweet, coconut 

Put all ingredients into a blender. Pulse until all ingredients are mixed and turn into a wet dough like texture. Line a pan with wax paper. Put mixture in pan and flatten with a spatula. Place in refrigerator for 1-2 hrs. Then cut up into squares or bars. Leave in fridge until ready to eat. 

I made two batches, and put it in a 13" x 9" rectangle pan. My kids LOVE these! And so do I. It's a quick and easy go to snack or dessert.

Hydrate, hydrate, hydrate...





I can't tell you enough how important it is to stay hydrated.
 
Other than being the main source that makes our body function correctly there are other reasons we should make sure that we get enough water each day.
 
* It boost our brain power.
* It helps maintain the balance of body fluids
*It helps with appetite control and gut health
*It will improve your mood
*It lowers the rick of heart attacks
*Just to name a few
 
My kids and I get tired of just plain water. But with so many water flavoring items out there, none of them are any good for us. They are full of chemicals. NEVER eat or drink anything with sucralose or aspartame. These sugar substitutes are worse than sugar!
 
We have started experimenting with different natural things to put in our water to make it taste different.
 
Tonight we have strawberries and mint infusing in our water. It will be ready for us in the morning!
 
 
What you will need for this drink.





1. Water pitcher with infuser. I got mine from TJMaxx for $14.99. TJMaxx also has just an infuser you can add to any cup or pitcher.
2. Filtered water
3. 6 strawberries, leafs cut off and cut into three pieces
4. 2-3 bundles of mint depending on how much mint flavoring you want.

 I rinse off my mint and strawberries to help get any dirt off of them. I put them in my infuser and then in the refrigerator for 8-10 hours.

It is so refreshing and the mint has a calming effect. My kids love it!

I also made a pitcher of an herbal tea we love to drink.

Herbal tea has come a long way and has many different flavors!!! Right now we are addicted to Tazo's passion fruit tea.

Here are some of the benefits of  drinking herbal tea.
* Tea can boost exercise endurance.
*Reduce the risk of heart attacks.
*The antioxidants in tea might help protect again a boatload of caners.
*Helps fight free radicals.
*Tea is hydrating to the body.
*Drinking tea is linked with a lower risk of Parkinson's disease.
*Tea could keep waist circumference in check.
*Tea can help the body recover from radiation.
*And so much more!


I like this tea best with lemonade but wanted to try a healthier way to make it. I think I found it!

Here is what you will need.

 
1. Pitcher
2. Tea
3. Lemon
 
Yup that's it!
I fill up my pitcher with water and then add the bag of tea to let it steep. I cut up 1/4 - 1/2 of a lemon and put it in the pitcher with the tea bag. I let it sit in the refrigerator for up to 2 hours. Take out the tea bag and you are ready to drink!
